A French cheesecake recipe
IngredientsFrench cheesecake recipe Tarte au fromage blanc prep time 20 mins cooking time 50 mins serves 6 25g / 1oz raisins 1 tablespoon kirsch 250g / 8 ozs pate brisee short crust pastry 200g / 7 ozs fromage blanc 3 tablespoons single cream 125g / 4 ozs sugar 3 eggs separated 15g / 1/2 oz arrowroot grated rind of 1 lemon icing sugar for dusting |
Place the raisins in a bowl with the kirsch and leave to soak.
Line a loose bottom flan dish with greased paper [9ins or 23cm].
Line with the pastry and prick the base with a fork. Place the fromage blanc in a bowl.
Add the egg yolks, cream, sugar, arrowroot and the lemon rind.
Beat the egg whites until stiff and gently fold them into the mixture.
Pour the cream cheese filling into the pastry case.
Sprinkle the surface with the raisins.
Place in a preheated oven 180c or 350f gas 4.
After 10 mins lower the oven temperature to 150c or 300f gas 2.
Bake for a further 40 mins then remove from the tin and cool.
Dust with the icing sugar and serve
