You will need a medium-sized head of cauliflower,
2 tablespoons of butter,
2 tablespoons of flour,
1 cup of milk,
1 cup of shredded cheese cheddar is a good choice,
salt, pepper, garlic powder, and a little bit of breadcrumbs for that extra crunch on top.
Once you have your ingredients cauliflower gratin all set, it is time to begin. First, preheat your oven to 375 F (190 C). This will ensure your oven is ready by the time you finish preparing the dish. Start by preparing the cauliflower. Remove the outer leaves and cut the cauliflower into florets. You want the pieces to be bite sized, not too big, so they cook evenly and are easy to eat.Bring a pot of salted water to a boil and add the cauliflower florets. Cook them for about 5-7 minutes, just until they are tender but not mushy. You want them to retain a bit of crunch. Once done, drain the water and set the cauliflower aside.
Now make the cream sauce. In a medium saucepan, melt the butter over medium heat. Once the butter is melted, add the flour and stir continuously to form a smooth paste, also known as a roux.
Gradually add the milk to the roux, whisking constantly to avoid lumps. Continue to cook and stir until the mixture thickens and starts to bubble. This should take about 5 minutes.
After your sauce has thickened, remove the saucepan from the heat. Stir in the shredded cheese, mixing well until the cheese has fully melted and the sauce is smooth and creamy. Season with salt, pepper, and a pinch of garlic powder to taste.
Now it is time to combine everything. In a large mixing bowl, toss the cooked cauliflower florets with the cheese sauce until the florets are well coated. Make sure every piece of cauliflower gets a good amount of sauce.
Pour the cauliflower and cheese mixture into a baking dish. Spread it out evenly so the baking is consistent. Sprinkle a light layer of breadcrumbs over the top for that delightful crispy crust.
Place the baking dish in the preheated oven and bake for about 20-25 minutes. You will know it is ready when the top is golden brown and the cheese is bubbling around the edges.
While it bakes, you can use this time to clean up the kitchen or prepare a side salad. The aroma of your cauliflower gratin baking should start to waft through the house, making it hard to wait for that delicious first bite.
Once the gratin is done baking, remove it from the oven and let it cool for a few minutes. This resting time allows the cheese to set a bit, making it easier to serve.
Serve your cauliflower gratin as a side dish with your favourite main course, or enjoy it on its own. This dish is so versatile, it pairs well with just about anything.
For a bit of variation, you could add other ingredients to your gratin. Chopped cooked bacon, fresh herbs like parsley, or even a sprinkle of parmesan cheese on top can add extra flavour.
